Omelette demi-lune fines herbes | Cocotine

Half-moon Omelette with Quinoa & Herb Salad

  • Dice the cucumber and cut the cherry tomatoes in half or in four.
  • Cook the quinoa in a saucepan of boiling water.
  • Chop some parsley and mint.
  • Toss the cold quinoa, vegetables, black olives and herbs.
  • Reheat the Half-moon Omelette and serve.
